Cream the butter and sugar together until smooth.
Add the salt and flour and mix until combined.
Stir in the almond extract, then chill the dough for a bit to make it easier to handle.
Roll the dough into 1-inch balls and roll them in sugar.
Place on a baking sheet and gently press down (a sugar-coated glass or fork works great).
Bake at 350° for 12–15 minutes, until just set.
Kid-friendly twist:
You can also roll the dough out and shape it into anything you want — hearts, circles, letters, you name it. Once baked and cooled, decorate with the kids using icing or colored sugar for a fun family activity.
